Brassica oleracea is a member of the Brassicaceae family. White Russian is a 1984 selection from the Wild Garden Seeds gene pool resulting from a hybrid between 'Red Russian' and 'Siberian' kales. The leaf tips are sensitive enough to be eaten raw but heating vastly improves their flavor. BENEFITS: This plant has been designated as a "superfood" for a worthy reason. It is high in vitamins A, K, and C, copper, iron, manganese, phosphorus, potassium, protein and fiber and different studies have linked it to a reduction in cholesterol levels. As with other brassica family members, kale has been linked to a decreased risk of prostate, breast, colon, ovarian and bladder cancers. Brassica oleracea var. sabellica, sometimes referred to as Tuscan, Dinosaur or Lacinato kale, is native to Italy and has been cultivated there for generations. As some of its common names indicate, it is very popular in Tuscany: Toscano, Nero di Tuscany, Tuscan Kale and Black Tuscan. This member of the Brassica family has leaves and their stems are entirely edible and can be quite tasty if prepared properly. BENEFITS: Kale is considered to be a nutrient-dense vegetable with powerful antioxidant and anti-inflammatory properties. To a modest degree, Kale is rich in beta-carotene, vitamin K, vitamin C, lutein, zeaxanthin, and calcium.
