Brassica oleracea var. botrytis, a member of the Brassicaceae family, was introduced to the United States in the 1940s and has been a worldwide favorite ever since. The head of the flower is the edible portion. BENEFITS: Snowball cauliflower is an excellent source of vitamin C, vitamin K, some B vitamins, dietary fiber and some essential minerals. It contains antioxidants that strengthen the body against cancer and heart disease by neutralizing free radicals. USES: Due to cauliflower's versatility in the kitchen, raw foodists have substituted it for cooked grains and high-carbohydrate foods such as rice and potatoes.
