Cabbage: Savoy
Brassica oleracea var. sabauda is sometimes referred to as Choux de Savoie, Cavolo Verza, Milan cabbage and Lombard cabbage. Along with broccoli and Brussels sprouts, Savoy cabbage is a member of the Brassica genus. The origin of the word savoy is the ancient Savoy region in the Western Alps, which encompasses parts of modern-day Italy, France and Switzerland. The cabbage's outside and inner leaves are edible. The interior leaves are delicate and fragrant.
BENEFITS: Besides its low-calorie content and high nutrient density, cabbage is also an exceptional source of fiber. In addition to its high concentration of vitamins, bitter compounds and antioxidants, Savoy cabbage is a source of high-quality plant-based protein.

Brassica oleracea var. capitata, also known as Red Acre Cabbage or Blaukraut and a member of the brassica family, is a heritage, hardy, cool-season annual vegetable with origins in China dating back to 4,000 BCE. Red Acre Cabbage is a classic heirloom type that yields excellent, spherical heads with a deep red color.
BENEFITS: Brassica vegetables have a high nutritional value since they are rich in vitamin C and soluble fiber. Carotenoids, which are phytochemicals recognized for their anti-inflammatory and anti-cancer properties, are present in the leaves of red cabbage.

Cabbage: Pak Choi White Stem
Brassica rapa is a member of the Brassicaceae family. White stem pak choi is native to China and Japan and has been cultivated for millennia. It is also known as Chinese white cabbage, bok choy, hakusai, bai cai and petsai. Both the leaves and stems are edible.
BENEFITS: Vitamins C and E, beta-carotene, folate and selenium are anti-cancer substances in this food. Beta-carotene and Vitamins C, E are potent antioxidants that prevent cell damage from free radicals, which may reduce your risk of developing cancer. Selenium may assist in retarding tumor growth.
