Broccoli: Early Purple Sprouting
Brassica oleracea var. Italica, often known as Purple Flowers Erupting Broccoli, is native to the eastern Mediterranean and Central Asia and is a member of the Brassicaceae family. The cultivation of purple broccoli began in Southern Italy.
BENEFITS; The purple sprouting broccoli is an excellent source of vitamin A, vitamin C, iron and fiber. In addition, it contains many minerals with potent anti-cancer properties, such as diindolylmethane and trace amounts of selenium.
USES: Purple sprouting broccoli is utilized in different salads, sides, pasta and baked products. These fresh and seasonal vegetable pair wonderfully with roasts.

Brassica olerace is a member of the Brassicaceae family. Waltham 29 broccoli seed was developed in 1950 by University of Massachusetts researchers in Waltham, Massachusetts. The edible components include vitamin C-rich florets, leaves and stems that provide calcium, potassium and iron.
Benefits: It is high in fiber, vitamin C, potassium, vitamin B6 and vitamin A, which aids in digestion, iron absorption and blood pressure regulation.
Uses: These microgreens have a moderate flavor and a variety of uses, including sandwiches, salads, tacos and as a garnish. You can steam, sauté, bake or add them to any soups or stews.

Italica 'Calabrese' is also known as Green Sprouting Broccoli or Sprouting Broccoli. This Brassicaceae family member was brought to the United States in the 1880s from the Italian province of Calabria. Not only are the flower heads but also the stems, buds and leaves edible.
BENEFITS: Besides vitamin C and carotenoids, this broccoli has many chemicals associated with lower cancer risk and other cancer-fighting components.
USES: This broccoli can be steamed, sautéed, roasted and utilized in different soups and stews. It can be served fresh on veggie platters or salads.
